Chablis

Chablis is located the northernmost wine region of the Burgundy. The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates. The wines are mostly vinified in stainless steel tanks often have a "flinty" or “steel” note, with much less influence of oak. Barrel maturation is a stylistic choice.

Many Grand Cru and Premier Cru wines receive some maturation in oak barrels, but typically the time in barrel and the proportion of new barrels is much smaller than for the white wines produced in the Cote de Beaune.

Historically, Chablis was one of the first locations in Burgundy at the beginning of the 19th century to make fine sparkling wines. The area was always known for its fine Chardonnay grapes and an important supplier of grapes to Champagne in the 19th century. Today, these sparkling wines are made under the AOC of Cremant de Bourgogne and we can visit one of the largest caves to sample a complete range of cuvées.

William Lefevre

Since 1959, William Fèvre has become one of the biggest land owners in Chablis with 78 hectares of prestigious vineyards, of which 15.9 are classified as Premiers Crus and 15.2 as Grand Crus.


La Chablisienne

In 1923. A number of winegrowers joined together to set up a cooperative to better withstand the economic difficulties of the time. Until the mid-1950s, the members of the cooperative delivered their production to La Chablisienne, who was then responsible for creating the blends. After which it was decided that the harvest would be delivered in the form of musts (unfermented juice), a particularity that has become the trademark of the house.


Domaine Laroche

Since 1850, Domaine Laroche has become one of the most respected and largest landholders (90 hectares) of Grand Cru vineyards in Chablis and a 9th century headquarters, the Obédiencerie of Chablis.

Grapes

Chardonnay is relatively easy to grow and tolerant of a wide variety of soil and climatic conditions an has thus been grown very successfully all over the world. The Burgundian town most famous for its Chardonnay wines is Chablis. Monks from the Abbey of Pontigny founded in 1114 were the first to plant Chardonnay grapes in Chablis on the slopes surrounding the River Serein, making a dry white wine renowned for the purity of its aroma and flavours of lemon and minerals.


Terroir

The Chablis region is the northern most wine district of Burgundy's Cote d'Or. The terroir is very similar to the Blancs de Blancs of Champagne with chalky soil filled with oyster shells at certain levels. Chablis has 4 AOCs: Chablis, Petit Chablis, 40 Chablis Premier Cru, and 7 Chablis Grands Cru Les Preuses, Vaudésir, Grenouilles, Valmur, Les Clos, Blanchot, and Bougros.


History

During the Middle Ages the Catholic Church became a major influence in establishing the economic and commercial interest of viticulture for the region. Chablis became part of the Duchy of Burgundy in the 15th century but in 568 the town was destroyed by the Huguenots. After the French Revolution, the vineyards became nationalized and auctioned off to local farmers.

Cultural Options

Vezelay
Throughout history, this has been a great centre for pilgrims. In 1190 King Philippe Auguste of France and Richard the Lionheart of England, met to depart on the 3rd Crusade. The medieval town is well preserved with 15th, 16th and 17th century houses, gates and ramparts and it is classified as an UNESCO World Heritage site.
