Champagne H. Billiot & Fils in Ambonnay
In the centre of Ambonnay, H. Billiot & Fils offers a village-focused introduction to grower Champagne. Its small family holding is rooted entirely in this Grand Cru village on the southern Montagne de Reims. Pinot Noir leads the planting, with Chardonnay adding another dimension. The interest starts with a close connection between one family and the land around its home village.
Five generations in Ambonnay
The family dates its vineyard story to 1896, when Eugène Billiot, an Ambonnay miller, bought vines. Grapes initially went to larger Champagne houses before the family began keeping some for its own wines. Billiot Champagne followed in 1937; the present H. Billiot & Fils house was founded by Henri in 1960, with cellars at 1 place de la Fontaine.
Serge Billiot subsequently widened the range and developed its special cuvées. Today the producer identifies Laetitia Billiot as the fifth generation, responsible for the business, production and winemaking. That continuity gives the house a small-scale family identity rather than the character of a large Champagne brand.
The family vineyards
The estate gives its vineyard area as 4.70 hectares across 18 parcels, all in Ambonnay, on south-facing slopes of the Montagne de Reims. The producer describes every cuvée as Grand Cru and entirely Ambonnay in origin.
Planting is approximately 75% Pinot Noir and 25% Chardonnay. Pinot Noir is central to the village’s reputation, but the Chardonnay share is a reminder that an Ambonnay estate need not work with just one grape.
